Ingredients
- Chicken
- Butter
- Onions
- Carrots
- Celery
- Garlic
- Chicken Broth
- Thyme
- Oregano
- Salt & Black Pepper
- Noodles
Steps
Part 1 - Cook the veggies
- Heat butter in large pot on medium heat
- Add onion carrots and celery
- Cook 5-7 minutes until softened
- Add garlic and cook 1 minute more
Part 2 - Add the chicken & broth
- Place chicken into the pot
- Pour in the chicken broth
- Add thyme, oregano, bay leaves, salt, and pepper
- Bring to a boil, then reduce to a simmer
- Cover and cook for 20 minutes, until chicken is cooked through
Part 3 - Shred the chicken
- Remove the chicken onto a plate
- Shred it with two forks
- Return shredded chicken to the pot
Part 4 - Add noodles
- Add egg noodles
- Simmer 8-10 minutes until noodles are tender
Part 5 - Finish and serve
- Add lemon juice if using
- Adjust seasoning with extra salt/pepper
- Stir in fresh parsley
- Serve hot
