Steps

Part 1 - Cook the veggies
  1. Heat butter in large pot on medium heat
  2. Add onion carrots and celery
  3. Cook 5-7 minutes until softened
  4. Add garlic and cook 1 minute more
Part 2 - Add the chicken & broth
  1. Place chicken into the pot
  2. Pour in the chicken broth
  3. Add thyme, oregano, bay leaves, salt, and pepper
  4. Bring to a boil, then reduce to a simmer
  5. Cover and cook for 20 minutes, until chicken is cooked through
Part 3 - Shred the chicken
  1. Remove the chicken onto a plate
  2. Shred it with two forks
  3. Return shredded chicken to the pot
Part 4 - Add noodles
  1. Add egg noodles
  2. Simmer 8-10 minutes until noodles are tender
Part 5 - Finish and serve
  1. Add lemon juice if using
  2. Adjust seasoning with extra salt/pepper
  3. Stir in fresh parsley
  4. Serve hot
